Pea & Chickpea Soup

Another delicious recipe from my 30-day online menopause support programme launching in April!


Simple, easy recipes with normal ingredients - nothing too fancy, no one needs the extra stress of trying to find the latest food fad ingredient.


So, what is your favourite flavour?


One of mine is pea and ham, or pea and chickpea.


Not only is it really delicious, but it is also SUPER CHEAP too!!


That's a win-win in my book!

Pea and chickpea soup (makes 6 portions)

Start to finish: 30 mins

Ingredients:

  • 1.8kg frozen green peas

  • 1 tblsp oil

  • 2 small red onions, finely chopped

  • 2 stock cubes - I use Kallo with 1500ml water

  • 1 clove garlic, finely chopped

  • 3 x 400g tins of chickpeas, drained and rinsed

Method:

  • In a jug, dissolve the stock cubes by adding boiling water.

  • In a large pan heat oil and gently fry onions for 3-4 minutes until soft, then add garlic for another 2 minutes.

  • Add the peas to the pan, then add the stock cube water, bring to the boil.

  • Allow to simmer for 15 mins.

  • Take off the heat and allow to cool slightly, then whizz up the peas with a handheld blender.

  • Separate into 6 portions, then add half a tin of chickpeas to each portion.
