Protein Boosted Banana Bread (8 portions)

Banana bread can be a great high protein snack.

Packed full of healthy fats, low in sugar and delicious warm with butter or eaten on the go - if you are looking for something that will crush cravings, keep you satisfied and is SUPER delicious and high in protein - you've found it!


Start to finish: 45 mins 


Ingredients:

  • 3 ripe bananas

  • 30g coconut oil

  • 1 tsp cinnamon

  • 3 large eggs

  • 1/2 tsp bicarb of soda

  • 1 tbsp fresh lemon juice

  • 200g ground almonds

  • 30g ground flaxseeds 

  • 2 tbsp chia seeds

  • 1 or 2 scoops unflavoured protein powder


Method:

  • Preheat oven to 160 fan

  • Pop all ingredients into a food processor and whizz until smooth

  • Pour into a lined loaf tin 

  • Bake in the centre of the oven for 30 minutes, then cover with foil and bake for another 35 minutes.

  • Once cooked, remove from the oven, and leave to cool 

  • Slice and enjoy whilst its still warm, or cool and have it for breakfast.

  • You can store in an airtight container for 3/4 days or slice and freeze.


NB - you can add half a bar of 85% dark chocolate, broken into small bits to make it extra delicious!
