Overnight Chia Seed Breakfast Puddings

Overnight Chia Pudding with Juicy Raspberries (serves 2)

Start to finish: 10 mins


Ingredients:

  • 40g chia seeds

  • 10g unsweetened coconut (desiccated or shredded)

  • 180ml full fat coconut milk

  • 120ml coconut water

  • 1/2 tsp ground cinnamon

  • 1/2 tsp vanilla extract

  • 50g fresh raspberries / strawberries / blueberries / 1 small sliced banana


Method:

  • In a small bowl or jar, mix all ingredients except the raspberries, stir well.

  • Pop the raspberries on top and cover.

  • Leave in the fridge overnight, and take out 30 minutes before eating.
