Overnight Chia Seed Breakfast Puddings
Overnight Chia Pudding with Juicy Raspberries (serves 2)
Start to finish: 10 mins
40g chia seeds
10g unsweetened coconut (desiccated or shredded)
180ml full fat coconut milk
120ml coconut water
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
50g fresh raspberries / strawberries / blueberries / 1 small sliced banana
In a small bowl or jar, mix all ingredients except the raspberries, stir well.
Pop the raspberries on top and cover.
Leave in the fridge overnight, and take out 30 minutes before eating.
